Today there was was a chill in the air so I whipped up a quick and easy Banana Bread for The family! Nothing like arriving home from school to a warm loaf of BANANA BREAD!

1⁄2 cup butter, softened
1 cup sugar
3 large eggs
2 cups mashed ripe bananas (about 4 large)
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1⁄2 teaspoon ground cinnamon
1⁄2 teaspoon salt
1⁄2 cup sour cream
Chocolate Butter (recipe follows)
Preheat oven to 350°. Spray a 10-inch loaf pan with baking spray with flour.
In a large bowl, beat butter and sugar at medium speed with a mixer until fluffy. Add eggs, one at a time, beating well after each addition. Add mashed banana, beating until combined.
In a medium bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Gradually add flour mixture to butter mixture, beating until well combined.
Stir in sour cream.
Spoon batter into prepared pan, and bake until a wooden pick inserted in center comes out clean, 1 hour. (Loosely cover with aluminum foil during the last 15 to 20 minutes of baking time to prevent excess browning.) Let cool in pan for 10 minutes. Remove to a wire rack, and let cool completely. Serve with fresh fruit.
